CASHEW BUTTER COOKIES
These cookies are delicious! The boys next door are my “tasters” and they thought they were great. I decided to make my own cashew butter since it can be expensive at the store…it was not difficult at all. If you prefer to buy a nut or seed butter rather than make your own, be sure to look at the list of ingredients. You want your butter to contain the nut/seed and perhaps a bit of salt and that's it. Pay attention whether the nut or seed is raw or roasted because they taste different; if you want roasted then choose "dry roasted." Avoid those with added oil, sugar, or other additives.

What I did differently and clarifications:
-Made my own cashew butter
-Did not add coconut sugar and everyone thought they were sweet enough
-Used 72% dark chocolate chunks since what I had
-My dough balls weighed 29-30 grams each, made 14 cookies
-Instead of placing dough balls in fridge, I put in freezer for just a few minutes
-Instead of pressing dough balls with my fingers, I put a piece of plastic wrap on bottom of a glass and used the glass to press down the balls
