BANANA CORN FRITTERS

These are so delicious! When you first start eating a fritter the sweetness from the banana draws you in, then watch out, you get a kick from the cayenne pepper!! I love spicy food and went crazy over these...I ate 4 fritters with just one bowl of soup!

I modified this recipe from “Eating Well”: Banana Corn Fritters

I purchased my cayenne pepper powder at Good Foods Co-op where they sell Frontier spices in bulk. They offer the choice of 35,000 heat units (HU) or 90,000 HU and I got the hotter one. It made a definite statement in the fritters! I saw on Amazon a cayenne powder that is 130,000 HU.

What I did differently:

-Did not use oil

-Instead of all purpose flour, used 1/4 cup white whole wheat flour and 1/4 cup almond flour

-I chose to use cayenne pepper, 1/4 tsp (my husband cannot handle much heat)

-For sweetness the banana skins should a least have some brown spots.

-Instead of an egg, I used a "flax egg." See link above about how to make a flax egg.

-Instead of dairy milk I used homemade almond milk that was sweetened with dates

-Added 1/2 TBSP raw almond butter when mixing the wet ingredients

-Made 9 fritters, spreading out using the back of a spoon to be about 3 1/2 inches across

-Instead of frying, baked 350 degrees on parchment paper-lined baking sheet for about 20 minutes until golden brown. I don't have an air fryer or would have tried that.
