BEST VEGAN MOZZARELLA CHEESE
Oh My Gosh. This is an amazing recipe, better than any other vegan mozzarella recipe I have tried. My husband, unaware what I had made, tasted it and said "it tastes like mozzarella." If I had confetti I would have thrown it around my kitchen and danced! My husband is not vegan and for him to say that is incredible! I used it to make quesadillas that were phenomenal.

I encourage patients with migraines to try changing their diet to find possible triggers. Dairy can be a trigger.

What I did and clarifications:
-Used 8 grams (1/2 TBSP) white vinegar
-Inadvertently put in twice as much fresh lemon juice
-Since using for quesadillas, baked as suggested to firm it up a bit (my cake pan was about 9 inches)
