BEST VEGAN PANCAKES EVER
I had cashew butter left over from making sugar cookies so decided to try another "Vegan 8" recipe to use up the rest of the cashew butter. These pancakes are easy to make and my husband, who is a huge pancake fan, said they were "very good."

When I made these, I had not had pancakes in 3 years. My typical first meal of the day is oat groats with wild blueberries. Are pancakes made with wheat flour ok to eat on occasion? What I did differently:
-Used whole wheat pastry flour instead of all purpose flour
-Used homemade cashew milk sweetened with dates instead of almond milk and maple syrup. Because of my changes, I ended up needing to add an extra 6-7 Tablespoons of cashew milk to get the right batter consistency.
-Since my milk and cashew butter were cold, I mixed the wet ingredients in my high speed blender which warmed them up to room temperature, the temperature the recipe recommends
-Cooked the pancakes in a ceramic pan so did not need to use oil to prevent sticking
