CARROT CAKE OATMEAL
YUM!! This is so good and worth making if you like carrot cake. I can enjoy this as a breakfast or even as a dessert. I made it to freeze so my daughter can have an easy breakfast for my granddaughter before going to work. I cut each raisin in half since my granddaughter is just 9 months old with no teeth!

I made a healthy swap by using Medjool dates in place of maple syrup or brown sugar. If you don't have a high speed blender you can chop up the dates and add them to the pot. If you really want some maple syrup or brown sugar, just put a small bit on top of your individual serving and don't mix it in.

What I did differently and clarifications:
-My cup of shredded carrots weighed about 85 grams
-My rolled oats were organic and sprouted, 85 grams/cup
-Reduced allspice to 1/4 tsp
-My applesauce expired so I peeled/cored a medium organic Cosmic Crisp apple and blended with the plant milk in a Vitamix high speed blender
-Instead of almond milk I used my homemade hemp milk
-Instead of maple syrup or brown sugar I blended 2 pitted Medjool dates into the plant milk using the Vitamix
-My 1/4 cup raisins weighed 36 grams
-Did not add walnuts or salt
-Made a double batch. After it cooled a bit I transferred into individual containers using a ladle. After fully cooled, covered and placed into the freezer.
