THUMBPRINT COOKIES (gluten-free)

My children often request thumbprint cookies for Christmas and other family celebrations. We have fond memories of thumbprint cookies made with butter and table sugar that I used to make before becoming a whole food, plant-based vegan. These are "transitional" cookies because they have coconut sugar but for special occasions I make an exception. They are quite delicious and sweet enough for those who have a "sweet tooth."

Coconut Sugar: A Healthy Sugar Alternative or a Big, Fat Lie?

What I did differently and clarifications:

-Used coconut sugar

-Made 12 cookies, each dough ball weighing 25 grams/0.9 oz

-When making the indention, dipped my thumb periodically in water so the dough would not stick to it

-Use jarred sugar-free fruit spread

-Let baked cookies rest on the baking tray for several minutes then transferred to a cooling rack
