"CHICKEN" FLORENTINE + AN INSPIRATIONAL TESTIMONY
A patient of mine, an RN and excellent cook, sent me this picture and recipe. She described the meal as PHENOMENAL (yes, she used all capital letters). The recipe uses soy curls in place of chicken.

Here is a bit of my patient's story which she gave me permission to share. She became my patient in 2018 and this is what she reported at her first visit with me:
"She has been obese since childhood and has undergone lap band procedure twice and both have failed. Her diet is poor. Her husband has health issues as well. She uses a lot of olive oil and butter when cooking. She feels that gluten contributes to her IBS symptoms so avoids it. She thinks she could get away from eating meat but her husband really likes it. She avoids starches fearing they are bad for diabetes. She was diagnosed with diabetes in January 2017 but does not tolerate the medication so her glucoses are not in control. She has a history of binge eating at bedtime. She describes having "bouts" of lactose intolerance but then will gradually reintroduce dairy so she can eat cheese which she really loves."
After learning about whole food, plant-based way of eating during her visits with me, she drastically changed the way she nourished herself and her husband. She has lost 90 pounds, kept it off, and completely reversed her diabetes. I am so proud of her!!
Notes about her changes:
-Did not use oil (see the recipe notes section about baking the soy curls)
-Subbed heaping 1/2 c white beans for cashews
-Instead of 1 cup of spinach she used a entire 5oz bag of Trader Joe's Power Greens
-Served over brown rice fettuccine noodles
