LEMON MILLET COOKIES

I enjoy almost any dessert made with lemons. Since I had great success making muffins with millet, I decided to try making cookies with it. These cookies are soft but had awesome flavor. My food-tester husband gave them a thumbs up as did my neighbors.

What I did and clarifications:

-Cooked 4 oz dry millet which after cooking and fluffing measured 1 cup

-Used heaping 1/4 cup of quick oats in place of instant oats

-Needed 2 1/2 medium bananas to get to 8 oz

-Used walnuts instead of pistachios, after chopping measured 1/2 cup

-Made 13 cookies. Used a very heaping TBSP per cookie and once on the baking tray, flattened them slightly.
