CRISPY POTATO CHIPS THAT WILL CHANGE YOUR LIFE

I am not exaggerating here. If you have been eating unhealthy, deep-fried potato chips, you are going to love this healthier replacement. I had a patient who considered himself a "potato chip connoisseur" and he said they were "great." My staff went so crazy over them they were calling family members telling them how to make some!

Because our society pushes an “anti-carb” message, I have many patients who believe that potatoes are fattening. Potatoes become fattening when deep fried or loaded with butter, sour cream, and bacon. Don’t blame the potato itself.

CRISPY POTATO CHIPS

What to do:

1. Slice washed, organic, unpeeled Russet potatoes using a mandoline or food processor so that the slices are thin and even.
2. Place the slices on a microwave-safe plate lined with parchment paper. If needed you can put extra raw slices in a bowl of water so they don't discolor as they wait for their turn in the microwave. (You can purchased trays for the microwave which hold more chips but I don’t own one.)
3. Sprinkle on desired seasoning.
4. Microwave on high for 4-6 minutes or until they brown as seen in the pictures. If the chips do not brown, they will not be crunchy.
5. Remove from microwave. They cool quickly and are ready to eat. Store in a closed container if by some slim chance you have any left.
