BEET BURGERS
I don't like red beets. They taste like dirt to me. My daughter brought me some free organic beets and I did not want to waste them so made burgers. For you beet lovers, give this recipe a try but I suggest reducing the thyme a bit since its flavor was strong or you can substitute with an herb of your choice. The texture of these burgers is nice. My husband did not like them, stating they were "too beety." Based on the blog comments they were well liked.

Beets and beet greens are excellent for your health. One reason is because they increase production of nitric oxide. Nitric oxide opens up your blood vessels to allow improved blood flow throughout your body.
Dr. Caldwell Esselstyn started the Heart Disease Reversal Program at the Cleveland Clinic years ago. His dietary program emphasizes leafy greens and beets which help improve blood flow to the heart. This is especially important if you have coronary artery disease.

What I did differently:
-Used quick rolled oats
-Used green lentils cooked for 6 minutes in my Instant Pot
-Used white whole wheat flour instead of all purpose four
-Formed 6 patties. There was no need to wet my hands when forming the patties.
-Did not use oil. Baked on baking sheet lined with parchment paper
