WALNUT AND KIDNEY BEAN SPREAD
I know it sounds awful but it was so delicious!! I am not lying! My non-vegan husband and I both thought it was very good and I usually despise kidney beans. I only made it because my husband bought an 8 pack of organic kidney beans from Costco (yes I wanted to hurt him for doing that in the first place).

What I did differently and clarifications:
-Walnuts weighed 30 grams and garlic 11 grams
-Used 2 TBSP reduced sodium vegetable broth
-Did not have fresh parsley so used 1 TBSP dried
-Stirred in all of the parsley and green onions rather than leaving some sprinkled on top
-Served for dinner as a wrap with whole wheat pita, homemade vegan mozzarella, and fresh baby spinach
