DARK CHOCOLATE BROWNIE COOKIES
I created this recipe to use up some ripe avocados. At first bite I wondered if I should have added more maple syrup but then after the second bite, I enjoyed it thoroughly. It is a cookie that seems like a brownie! If you like dark chocolate, you will enjoy this recipe.

Ingredients
1/2 cup mashed ripe avocado
1/4 cup maple syrup
1 flax egg (combine 1 TBSP ground flaxseed with 2 TBSP water, place in fridge 10 minutes)
1 tsp vanilla extract
3/4 cup oat flour
1/3 cup cacao powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup at least 70% dark chocolate chips
1/4 cup chopped pecans (optional)
Instructions
Combine the avocado, maple syrup, flax egg, and vanilla in food processor until smooth. In separate bowl whisk together flour, cacao powder, baking soda, and salt. Add the wet ingredients to the dry ingredients and stir until combined. Fold in chocolate chips and if adding, nuts. Using a spoon, drop a heaping tablespoon onto a baking sheet lined with parchment paper. Make about 12 cookies. Flatten the top with the spoon. Bake on center rack in oven preheated to 350 degrees for about 10 minutes. Do not over bake. Remove from oven and let cool for a few minutes before transferring to a cooling rack.
