SOUTHERN KALE AND BUTTER BEANS
I thoroughly enjoyed this flavorful dinner. My husband who does not like kale shocked me when he said this dish was "good." He thought the smoky flavor masked the usual taste of kale though he would have liked it even better with more beans (code for less kale).

It always amazes me how much leafy greens shrink when you cook them. This thought led my brain to the Seinfeld episode about "shrinkage" and I laughed out loud.
Here is a short article to introduce you to bulgur wheat if you have never tried it.
What I did differently:
-My TBSP of minced garlic was heaping (4 medium cloves)
-Used "no salt added" diced tomatoes
-Reduced water to 3/4th cup and increased vegetable stock to 1/2 cup because it was the amount left in my refrigerator
-Used reduced sodium tamari and only used 2 TBSP
-Did not have minced onion flakes so left it out and increased the onion powder to 2 tsp
-Served over cooked bulgur.
