TOFU "BACON" BITS
I have been doing better getting more salads into my diet. When I eat more salads, my husband does too. Today I surprised him with "bacon" bits on his salad and he really loved them!

Ingredients
1 block firm tofu, 14 oz
1 and 1/2 TBSP reduced sodium tamari or soy sauce
1 TBSP vegan Worcestershire (I was out once so substituted extra reduced sodium tamari and it still was tasty)
1/2 TBSP maple syrup
2 tsp liquid smoke
1 tsp smoked paprika
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp cracked pepper
pinch salt optional
Instructions
1. Drain the tofu. Wrap the block in a kitchen cloth and set something heavy on top (I use my cast iron pan). Let it press for at least 15 minutes.
2. While tofu is draining, place the other ingredients in medium bowl and combine well.
3. Crumble the tofu into the bowl with the spice mix and toss until well combined.
4. Spread the crumbles on a parchment lined baking sheet. Bake 350 degrees for about 40 minutes or until done to desired crispness. Toss about every 10-15 minutes while baking.
