DELICIOUS "CHICKEN and CHEESE" QUESADILLAS

These were so good that my husband immediately asked that I put them in our routine dinner line-up! This is high praise given that my husband is not vegan.

The great thing about quesadillas is that you can use whatever ingredients you prefer. I used my newest favorite vegan mozzarella, soy curls "taco meat," roasted poblano peppers and sliced scallions. To mine I also added chopped pickled jalapenos and fresh cilantro.

Here are options for cooking poblano peppers. I roasted mine in a Breville oven. Let them cool on the counter then peeled and chopped.

My favorite tortillas to use when making quesadillas is Ezekiel brand.
