CANDY BAR STUFFED DATES

Sweet snackers can rejoice because these treats are delicious, full of nutrients, and kid-approved. You can fill the dates as described in the recipe blog, fill them with whatever you prefer, or eat them plain.

The recipes for the “candy bar” stuffed dates can be found at the blog “Sweet Vegan Sara”: Vegan Candy Bar Stuffed Dates. For an even healthier "Reese's,” mix some cacao powder with the peanut butter instead of using chocolate chips (they are good partially frozen if you can wait that long).

I made additional treats:

-"banana split" using banana, coconut, and chocolate chips

-"pecan pie" using homemade walnut butter and a pecan

-"apple pie" using a piece of apple and cinnamon

What I used:

-Medjool dates

-Organic peanut butter made with ground nuts and a bit of added salt as the only ingredients

-"Hu Gems" 70% dark chocolate pieces, mostly chopped one piece per date.

-Unsweetened shredded coconut

Here is a short article by a registered dietitian, including a 1 minute video, summarizing the health benefits of dates:
