I can't remember what General Tso's chicken tastes like but this vegan recipe is super good. It was too spicy and "gingery" for my husband but I loved it. The leftovers were great too. I served it over rice.

What I did differently for the sauce:

-Definitely make a double batch of the sauce

-Used veggie broth instead of water

-Did not used sugar. Instead in a high speed blender I combined the broth, tamari, mirin, rice vinegar, and 2 pitted Medjool dates until smooth.

-Used 2 TBSP rice vinegar

-Reduced the sesame oil to 1 tsp (Dr. McDougall allows a dash)

-I don't have a ginger grater so finely chopped mine by hand

-Added an extra clove of garlic

What I did differently for the stir fry:

-Did not use oil

-Increased the green onion to 1/3 cup and mine was mostly white part

-Didn't have red bell pepper so used all green, cut into short strips

-Used carrot cut into small strips

What I did for the instructions:

-Soaked the soy curls in the General Tso's sauce for 30 minutes. Drained using a fine mesh strainer.

-Dry sauteed the garlic and green onion, stirring constantly and adding a splash of water when wanted to stick. Cooked for 2 minutes.

-Dry sauteed the peppers/carrots over medium heat, stirred constantly and added a splash of water when wanted to stick. Cooked for about 8 minutes until softened.

-Mixed the corn starch with cold water before adding to the drained marinade.
