CHOCOLATE CHIP MUFFINS

These awesome muffins are proof that you can make delicious treats without using eggs, oil/butter, or dairy. The recipe is simple though I did complicate it a bit by using dates instead of maple syrup to make it even healthier. To use dates, you will need a high speed blender.

What I did:

-Chose whole wheat pastry flour and almond butter

-Did not add a banana since I use dates

-Did not sift the dry ingredients together

-Instead of the maple syrup and 1/2 cup almond milk listed in the recipe, I put 1 cup of homemade cashew milk and 6 pitted Medjool dates along with the almond butter and vanilla into a high speed blender. Blended until smooth then added that mixture to the dry ingredients.

-Did not grease the muffin pan rather used parchment paper baking cups

-Made 9 muffins. Baked 18 minutes. Removed from pan and cooled on cooling rack.
