GLUTEN-FREE SUGAR COOKIES

My son got married 12/27/20 to the love of his life. She is even sweeter than these heart-shaped cookies that I baked especially for them. I have not used powdered sugar since becoming whole food, plant-based but made an exception for this special occasion. Since the frosting is so sweet, I recommend drizzling it rather than completely coating the cookie. They are fabulous!

GLUTEN-FREE SUGAR COOKIES

What I did:

-Mixed the wet ingredients together before adding to the dry ingredients

-Used a spatula to initially mix the dry and wet ingredients but to get it completely mixed had to use my hand

-Made 7 large heart cookies and 1 small round one. Baked 12 minutes.

-Colored the frosting using beet juice

-Should have only made 1/2 batch of frosting since had lots left over

-To get the frosting lines I repeatedly dipped a small spoon into the frosting, flicked the spoon back and forth over the cooled cookies which had been placed back on the tray. Rotated the tray to change the direction of the lines.

-Let the frosted cookies set out overnight to allow the frosting to harden
