These cake-like cookies are divine if you love lemon. You will need to share them because they are best eaten within the first 2 days or they become too soft. They contain maple syrup and coconut sugar so would be a treat for a special occasion only. I consider this a "transitional" recipe when changing from less healthy options. If you struggle with sugar cravings or are trying to reverse disease best to find a cookie recipe that uses fruit as the sweetener.

What I did differently:

-I don't have a cookie scoop so used a round 1 TBSP measuring spoon and filled it with a heaping mound of dough

-Used coconut sugar, not white sugar

-I used a microplane for zesting an organic lemon.
