NO BAKE STRAWBERRY RHUBARB CREAM PIE

A generous farmer brought my daughter some rhubarb which she kindly passed on to me. When the weather is hot, a chilled pie that does not require me to run my oven is a good way to go. This pie is refreshingly delicious.

What I did differently:

-Lined a 10 inch springform pan with parchment paper to avoid oil

-Since I used a 10 inch pan, I added an extra 2/3 cup of nuts to the crust. Since I did not have enough pecans, I used some walnuts. My 1 and 1/2 cup dates for the crust was packed. I did not need to add water.

-For the topping I used fresh fruit, sliced, then measured. The lemon juice was 2 TBSP and the almond milk was 2 TBSP. Instead of maple syrup I used 1/2 packed cup of dates. After pouring the topping onto the crust, used a spatula to spread it evenly.
