3-INGREDIENT BANANA OATMEAL BREAKFAST COOKIES

It doesn't get easier than this. If you don't have a fork, use your fingers! If you have young children, divide the batch and let them add in ingredients they like such as dried fruit, nuts, or seeds. Children are more apt to eat healthy foods if they get to help prepare it and if they see their parents enjoying it.

What's a "Silpat" mat? A brand of silicone mat you can place on a baking sheet to keep food from sticking. There are other brands on the market too.

What I did differently:

-Used all quick rolled oats (1 and 1/2 cups)

-Bananas were on the large side and were very ripe

-Reduced the chocolate chips to 1/4th cup and it was still too much for me. I didn't have mini chips so chopped up regular chips. My chips were 70% dark chocolate.

-Added 0.1 oz package of Taster's Choice instant coffee since the idea of coffee mocha sounded good to me. Mixed well with the banana until dissolved.

-Made 13 cookies, placed them on parchment paper, and baked for 15 minutes
