3-2-1 SALAD DRESSING

I was never much of a honey mustard fan but I have come to like this salad dressing. It is healthy, quick, tasty, and can easily be modified to add variety. Eating some raw greens every day is my goal and it is much easier to accomplish this with a good dressing. This dressing was created by Jane Esselstyn RN and is included in her father's book "Prevent and Reverse Heart Disease." Jane's father is Dr. Caldwell Esselstyn who started the cardiovascular prevention and reversal program at The Cleveland Clinic Wellness Institute.

I used the dressing on a raw kale salad with fresh ground pepper. My husband ran because he does not like kale so I ate it all myself. If you are not used to preparing kale, remember that it needs to be massaged to tenderize it and make it more palatable. I put a small amount of the dressing on, then massaged it. You can see in my pictures how much the volume reduced as the leaves soften. Here is a video to show you how to prepare kale.

Jane's 3-2-1 Salad Dressing Recipe

Ingredients

3 TBSP balsamic vinegar

2 TBSP Dijon mustard or mustard of choice

1 TBSP maple syrup

Instructions

Whisk the ingredients in a bowl or place in a jar and shake until smooth. Makes several servings.

What I did differently: Instead of maple syrup I used 2 TBSP date paste (my dressing is therefore 3-2-2)
