NO DRUGS REQUIRED PIZZA ROLLS
It's rare to find anyone who does not like pizza. Pizza has been listed as the most addicting food in part because of the cheese. These portable pizza rolls are awesome and will stimulate your dopamine receptors in a natural way. The tofu-based ricotta in this recipe is so good that I did not yearn for cheese. Just the smell of these baking made me feel happier!

McDougall corn butter recipe can be found here. I put all the ingredients in a pot, cooked until thickened, then thinned it out in my high speed blender. Refrigerate.

What I did differently:
-Could not find an oil-free whole grain flour pizza dough at the store so made my own (recipe below)
-Used firm tofu because that's what I had
-Use Frontier Italian seasoning from the bulk spices at the Co-op since has a lot of flavor
-For the tofu ricotta I added 2 large cloves of garlic
-When cooking the shallots I used 3 large cloves garlic, then added the spinach
-My finely shredded shallot was about 3 and 1/2 TBSP
-I made 13 rolls and placed in 2 different baking pans lined with parchment paper
-Baked for 30 minutes
-Served with pizza sauce for dipping
What I will do differently next time:
-Roll the dough out a bit thinner (I would have this time but ran out of space on my cutting board and did not want to try to move it to my counter.)
-Perhaps add some other pizza toppings that my family likes or double the spinach/shallot/garlic
PIZZA DOUGH
1 1/2 cups whole wheat pastry flour
2 cups white whole wheat flour
1 1/4 cups plus 4 tsp warm water
1 packet (1/4th oz) fast-rise yeast
2 TBSP McDougall Corn Butter
1 tsp salt
In a medium bowl combine dry ingredients. Add wet ingredients and combine just until the dry ingredients are incorporated. Cover with a towel and set aside for 30 minutes. Place the dough on a clean, floured surface and knead for a couple of minutes. Cover with plastic wrap and a hand towel. Set in a warm place for about 60 minutes until the dough has doubled in size.
