SIMPLY DELICIOUS SIMPLE COOKIES
I hadn't seen my daughter in weeks so when she said she was stopping by, I quickly made a batch of cookies to celebrate. If I can't give her a hug during a pandemic, I can throw her a cookie! This recipe is adapted from an Engine 2 recipe and is super easy. You can add whatever extra ingredients you like to the base recipe. I added coconut and chocolate chips per my daughter's request and they were scrumptious.
People who know me know that I like to hug. Consider this my notice that when the threat of COVID is over, I am giving FREE HUGS. Enjoy this video of people giving free hugs to total strangers. It will make you smile.
Simply Delicious Simple Cookies
Base Ingredients
3/4 cup oat flour
1/4 cup quick oats
1/8 cup maple syrup
1/4 cup peanut butter
1/2 Tablespoon ground flax
1/2 Tablespoon vanilla extract
1 small very ripe banana, mashed
pinch salt
I then added 1/3 cup chocolate chips and 1/2 cup unsweetened shredded coconut. Other options include chopped nuts, dried fruit, cacao nibs.
Directions
Combine all ingredients well in a bowl.
Spoon out a heaping Tablespoon of dough, shape into a ball and place on a parchment paper lined baking tray or a non-stick tray. I made 11 cookies.
Use the bottom of a glass covered with plastic wrap to press down the dough to make a flat cookie.
Bake 350 for about 14 minutes.
Transfer cookies to a cooling rack.
