SMASH CAKE

I hadn't heard of a "smash cake" until my daughter-in-law asked me to find a healthy recipe for my 1 year old grandson's birthday party. He loved it! He didn't smash it but he did have fun eating bites from each layer.

Here's the recipe by “Ambitious Kitchen” that we used for the cake: Baby’s First Healthy Smash Cake. To make it vegan, we used "flax eggs" instead of eggs. Here's how to make a "flax egg": How To Make a Flax Egg

Here's the frosting recipe we used by “Oatmeal With A Fork”: Healthy Peanut Butter Frosting (No Powdered Sugar!)

My daughter-in-law has her doctorate degree in nursing and keeps up with the literature when it comes to feeding my grandson. His diet consists mostly of homemade plant-based foods. The newer recommendations are to offer infants common food allergens starting around age 6 months to lower their risk of developing a food allergy.
