One-Pot Chili Mac
My daughter sent me this delicious recipe. I am helping her out now that there is a new baby in the house. I used Beyond Beef plant-based ground meat substitute since her husband does not like mushrooms and my local grocery stopped selling tempeh. If you use Beyond Beef I consider this a “transitional recipe” since obviously using mushrooms and tempeh is a healthier option but both beat using ground beef. I just now became aware of the American Diabetes Association "Better Choices for Life" labeling since it was on the back of the Beyond Beef package.

What I did differently:
-Used Beyond Beef instead of tempeh and mushrooms
-Cooked the Beyond Beef and the onions together without added oil
-Reduced added salt to just 1 tsp
-My vegetable broth was reduced sodium
-Used kidney beans
-Did not add tomato paste
-Used frozen corn
-Used whole wheat rotini, 12 oz. It came in a 16 oz box but do not use more pasta than it calls for
-Did not add sweetener
