SPINACH POTATO TACOS

You don’t need to wait for a Taco Tuesday to make tacos for dinner. This certainly is not a traditional taco but is easy and tasty and even my omnivore husband liked it. To prepare it even faster you could use frozen cubed potatoes. It is very filling!

Poblano peppers are a relatively mild pepper, not as hot as a jalapeno. To compare pepper hotness, peppers are given a score called "Scoville Heat Units" (SHU) which you can read about here. Poblano peppers range from 1000-1500 SHU.

What I did differently and clarifications:

-My potatoes after cutting measured 5 cups. I boiled them a few minutes then browned them in my Breville oven on air fry setting. I had ample left over which I served on the side.

-My sweet onion after dicing measured 1 3/4 cup

-My poblano pepper after dicing measured a heaping cup.

-I made my own cashew milk by blending 1 cup water with 1/4 cup raw cashews in my high speed blender. Used it all.

-Used a nut bag to squeeze the liquid from the frozen spinach

-Added 3/4th of the potatoes at the end since they were still hot from the oven.

-Warmed the tortillas in the microwave instead of a skillet. I used blue corn tortillas.

-Needed a bit of salt which was added to individual servings as desired
