BANANA CARROT MUFFINS

These muffins are tasty, super easy, and super quick. The recipe did not call for nuts but chopped walnuts or chopped pecans would be a great addition if you are a "nutty person" like me.

I brought these muffins to my "Plant Medicine Mindful Medicine" support group meeting last night. They lead to a conversation about what is meant by "whole food, plant-based" (WFPB) eating. A pure definition of WFPB eating would mean that only whole foods are eaten that have had no processing whatsoever. Realistically, most people use foods these days that have had some processing. A minimal amount of processing is acceptable and maybe on rare occasion moderate processing is acceptable. The less processing the better, especially if you have diseases to reverse. Highly processed foods are not included in this way of eating. See my slides at the end of the page for details.

Date sugar is actually finely ground dried dates. Dr. Michael Greger considers it the healthiest processed sweetener. Here is his 4 minute video comparing sweeteners: The Healthiest Sweetener

If you don't have date sugar I suggest you use a different recipe. You could use a different sweetener as described in this “SPICEography” article but it won't be as healthy: What’s A Good Date Sugar Substitute?
