OIL-FREE AVOCADO PESTO
When making this pesto I thought about the green Grinch! If you are having a rough day, this pesto will help change your mood from grouchy to happy. It's awesomely delicious, healthier than regular pesto, and easy to prepare. I mixed it with pasta but you could use it on pizza, sandwiches or as a dip. What does Dr. Michael Greger say about avocados? What I did:
-Used a full 2.25 oz bag of pine nuts
-Because of my blender, I first blended the avocado, garlic, and lemon juice. Then added pine nuts and blended. Then added nutritional yeast, salt, pepper and blended. Then added basil leaves and blended, pushing the leaves down as needed until smooth. I did not add water to thin it out.
