WHOLE WHEAT FIG AND WALNUT BREAD-NO KNEAD
I came across this recipe on Facebook and jumped up immediately to make it. OH MY is it delicious and was so simple to make. If you have never made your own bread, this is a good one to try.
You can find the recipe by Rosa Tamm at the plant-based recipe blog “This Healthy Kitchen”:
NO KNEAD VEGAN WHOLE WHEAT BREAD RECIPE W/ FIG & WALNUT
You can watch this 3 minute video by Dr. Ann Kulze to learn about some of the benefits of walnuts: The Amazing Benefits of Walnuts
See the PowerPoint slide at the bottom of the page to learn about common whole wheat flours.
What I did:
-Used parchment paper rather than greasing the loaf pan. To get the parchment paper soft enough to line the pan, crinkle it up into a ball, open it up, then repeat several times until softened.
-I did not have regular whole wheat flour so used white whole wheat flour. Measured using a kitchen scale.
-My instant yeast packet was 7 grams so that is all I used
-Reduced salt to 1/2 tsp
-Used maple syrup
-Used organic Smyrna figs because it is what I had (my husband got a big bag from Costco). I used 7 figs and after removing the stems they weighed 115 grams
-When adding the figs and walnuts to your dough, can use your hand to make it easier to incorporate
-Instead of covering with plastic wrap when rising I just folded the extra parchment paper off the sides of my pan onto the top and then placed a kitchen towel on top.
-The dough does not double in size but will rise to come to the top of the pan and will rise further in the oven
