SUSHI BOWL
This Asian bowl is a winner with its delicious spicy cashew mayo sauce. Rice bowls are easy to throw together and you can include whatever you want and how much you want!

What I did:
-I used a mixture of brown and white rice since my husband doesn't like all brown. I cooked 1 cup of each dry rice in my rice cooker at the same time with the setting on "brown rice"
-Did not include sweet potato
-I used 1/2 sheet of nori per bowl since we like the flavor
-For the spicy mayo sauce I did a "quick soak" of the cashews by covering them with boiling water and soaking 30 minutes. For the other ingredients, used total of 4 TBSP water and used reduced sodium tamari instead of soy sauce. I processed using a high speed Vitamix blender so it was smooth.
