AMAZING CARDAMOM PECAN COOKIES
I often talk about delicious food during visits with my patients. This week a patient mentioned liking cardamom cookies. I did a double take because I had never had those but I like cardamom spice. Here is a recipe that is amazingly delicious. The maple syrup is generous so I consider this recipe "transitional" but I made them during the holidays so they were a special treat!
You can find the recipe at “The Vegan 8” blog: Vegan Cardamom Pecan Cookies

If you prefer a 2 minute video about cardamom, here is Chef Katie Simmons talking about it: Cardamom
I followed the recipe exactly but want to let you know that I:
-Bought Frontier cardamom powder in the bulk section at Good Foods Co-op so would be very flavorful. Don't freak when you see it is $55 per pound because 2 tsp for this recipe hardly weighs a thing. IT'S WORTH IT!
-Made my own roasted almond butter because I like mine only lightly roasted and I only had raw almond butter on hand (the blogger likes Trader Joe's roasted almond butter). It took 45 minutes to make the almond butter so I won't be doing that again!
-Put pecans both in the cookies and on top
-Dough balls each weighed about 34 grams, made 17 cookies
