TEMPEH REUBEN SANDWICHES
Shockingly, I have come to really like sandwiches made with tempeh. I made a healthier sandwich than described in the blog, avoiding vegan butter, oil, or vegan cheese but it tasted great nevertheless. Even my non-vegan husband liked it without the cheese... or at least he has resigned himself to the fact he ain't getting cheese!

What else I did differently:
-Steamed then sliced the tempeh like this to get 24 even pieces: Cut the block in half, then each half in half. Now I had 4 chunks. I cut each of those 4 chunks in half to make 8 chunks. I cut each of those 8 chunks into 3 slices.
-Marinated the tempeh for 2 1/2 hrs
-Used a ceramic nonstick pan rather than cast iron pan
-Did not butter the bread
-Used raw sauerkraut
