THAI PINEAPPLE FRIED RICE
My husband loves pineapple fried rice from our local Thai restaurant but of course they make it using oil and egg. I was so happy that I could serve him an oil-free vegan option that he thought was terrific.

What I did differently:
-Did not use coconut/vegetable oil
-Did not add eggs
-Did not have fresh pineapple so used 10 oz bag frozen pineapple chunks, defrosted, cut into small pieces
-Added some organic unpeeled carrot, julienned
-Did not add cashews since my husband has weight to lose
-Did not have jasmine rice so used regular rice. I cooked 2 cups of raw rice in my rice cooker, chilled it, and used it all (half white, half brown since my husband does not like brown)
-Did not add extra salt
-Before serving I added torn pieces of nori (edible seaweed)
-If desired, drizzle with a teeny tiny amount of sesame oil
