HOMEMADE CHILI

With a chill in the air, today was a good day for chili. This recipe is unique in that it uses black beans and pinto beans. I was worried my husband would not like a non-traditional chili, but he really enjoyed it. The smoked paprika gave it a distinct "manly" taste that my husband found appealing and hence he did not complain about the carrots!

Is "Chile" the Same as "Chili" and "Chilli?" It is still confusing so don't feel you are alone in this!!!

What I did differently:

-Did not use oil when sauteing the vegetables

-If you don't like smoky flavor, can use some regular paprika to substitute for smoked paprika

-Used vegetable broth instead of water.

-Simmered for 2 hours because I had the time

-Didn't add lime or vinegar because I forgot!

-My husband did not want cilantro so I put it in my own bowl. It was delicious!

-Served it with a pumpkin cornbread muffin but next time I may try baked tortilla chips.
