VEGAN PEPPER STEAK WITH ONIONS

If you are looking for a quick and delicious meal, this is it. We had it for dinner one night and my husband wanted it again the next day! It doesn't taste like steak but is super good. You can purchase soy curls online from Butler Foods. If you don't have soy curls, use mushrooms or extra veggies instead. Total YUM!

Vegan Pepper Steak with Onions

Ingredients

For the pepper steak

4 ounces Butler Soy Curls

1 large onion, sliced

1 green bell pepper, sliced into medium strips

1 red bell pepper, sliced into medium strips (I didn’t have a red bell pepper so used 2 green peppers)

1 teaspoon black pepper

Salt to taste

For the sauce

1/4 cup of low-sodium soy sauce or tamari

1 Tablespoon cornstarch

1 Tablespoon maple syrup

1/2 cup of water

1 teaspoon of onion powder

1 teaspoon of garlic powder

1/4 teaspoon ground ginger

Instructions

  1. Place the soy curls in a bowl and rehydrate using water per package instruction. Drain.

  2. Whisk the brown sauce ingredients together in a small bowl.

  3. Add the peppers and onions to a pan and dry saute on medium heat until softened and browned. I cooked them for about 10 minutes, stirring very frequently. Add a splash of water when they want to stick.

  4. Toss the soy curls in the pan with the peppers and onion.

  5. Season with black pepper and salt if using. Cook for 1-2 minutes.

  6. Pour the brown sauce into the pan, stir to coat everything well, and cook briefly until the sauce thickens.

  7. Can eat as is or serve over rice.
