"MEATlessBALL" SUBMARINE SANDWICH
My husband and I are not always happy with the endings of UK Basketball games but we are always happy with our choice of food to eat during the games. My meat-eating Jersey husband said this sandwich was "better than any meatball sub he's ever had from Subway or Wawa!"

What I did differently for the meatballs:
-Used heaping amounts of the dried parsley and dried basil
-Mixed the with my hands so I could break up any remaining pieces of chickpea and combine the ingredients well
-Made 30 balls and cooked 20 minutes. If you make your balls too big they will be too soft in the center.
-After my tomato sauce was done, I gently added the balls to the sauce
What I did differently for the sauce:
-Did not use oil. Dry sauteed the garlic but it didn't get brown
-Did what was suggested in that I used cans of whole tomatoes and very briefly processed them in my food processor to break them up
-Used date sugar instead of cane sugar
-Added 1 1/2 TBSP Italian seasoning
Other serving suggestions: can serve over pasta, spiralized vegetables (spiralized zucchini is called "zoodles"), spaghetti squash, or eat as is.
