EASY RAMEN SOUP
I made this quick ramen noodle soup for a friend who wasn't feeling well. A good shot of vegetables and miso can help what ails you! Since I like spicy food, I added Sriracha to my first bowl but much preferred the Chili Sauce I added to my second bowl. My husband loved it!

What I did differently:
-Increased the minced garlic to 1 1/2 TBSP
-Increased the miso to 1 1/2 TBSP
-Used 2 cups of vegetable stock and 3 cups water
-Used unhulled sesame seeds
-Did not add salt but did add black pepper
-Did not have shiitake mushrooms so used 8 oz of baby bella caps, sliced
-My frozen edamame was still in the pod so I cooked them, took the beans out of the pods, and added them last minute
-Did not have bean sprouts so left them out
-Coarsely chopped the snow pea pods
-Simmered 30 minutes
-Did not add the miso until I had taken the pot off the stove at the end so as to preserve the probiotics
-Doubled the recipe
