EASY PLANT-BASED ALFREDO SAUCE
There are lots of plant-based alfredo sauce recipes on the internet with great ratings. This one was very simple, adding all of the ingredients to a high speed blender and processing until smooth. This recipe uses cashews but to lower the fat content you can choose one made with cauliflower or white beans or non-dairy milk. They are all much healthier than traditional alfredo made with butter, cream, and cheese. Add whatever vegetables you want to the dish, either on the side or mix them straight in with the pasta.

If you have never used nutritional yeast, here is a lot of useful information about it.
Note: Many brands of nutritional yeast are fortified with folic acid and other vitamins. There is concern about potential harmful effects of synthetic folic acid. People with certain gene mutations, such as MTHFR gene mutation, cannot process folic acid normally. If you are concerned about consuming synthetic folic acid, you can buy nutritional yeast that is not fortified. Dr. Joel Fuhrman wrote a blog about the difference between folic acid and folate.

-Since I have a high speed blender, I soaked the cashews in hot water for 2 hours rather than overnight
-Reduced the salt
