GOOD LUCK AND GOOD HEALTH BLACK-EYED PEAS

My husband surprised me by coming up with this recipe though he thought I was being too pesky asking for details and pictures! He likes his food salty and I don't so I was able to convince him to change some of the broth from ham-flavored to regular vegetable broth which has less sodium. If you are on a reduced sodium diet, you can make this using all reduced sodium vegetable broth.

Black-eyed peas are actually beans. Beans, beans they're good for your heart, the more you eat, the more you're smart! Here's a brief video by Dr. Greger about the cardiovascular benefits of beans.

Ingredients

2 bags of frozen black-eyed peas, 12 oz each

1 cup chopped onion

3 stalks celery, chopped

2 carrots, chopped

3-4 cloves garlic, finely chopped

1 bay leaf

1/4th tsp crushed red pepper flakes or to taste

6-8 drops liquid smoke

fresh ground pepper to taste

2 cups prepared vegan ham flavored broth

1-2 cups vegetable broth (He used 2 since we like our peas with some remaining broth once done cooking)

Directions

Place all of the ingredients into an Instant Pot. Cook on high for 13 minutes. Release the pressure once done. If you don't have an Instant Pot you can cook these on the stove or in a crock-pot.
