HEALTHY SALAD CROUTONS

Thanks to the influence of Dr. Joel Fuhrman, my husband and I have incorporated a lot more salads into our diet. Tonight, to add variety, I made croutons spiced with Dr. Michael Greger's seasoning blend but you can use any dried herbs/spices you prefer. Using just garlic powder works well. My husband really liked them.

What is aquafaba? A fancy name for the liquid associated with beans, frequently chickpeas. Yes, really. Read here for more information.

Here is the recipe for Dr. Greger's Savory Spice Blend. I didn't have celery seed so used celery salt instead.

What I did differently:

-Used 4 frozen slices of Sesame Ezekiel Bread but you can use your bread of choice

-Brushed both sides of the frozen bread with aquafaba using a pastry brush but you can use a different liquid if you prefer

-Cut the bread into cubes

-Placed the bread cubes in a bowl, slowly sprinkled 1/2 tsp of seasoning blend while tossing so as to coat the bread cubes with spice

-Spread out the bread cubes onto a parchment paper lined baking sheet

-Baked 400 degrees for 12-14 minutes tossing half way through or you can bake until desired level of crunchiness
