PEANUT BUTTER SHORTBREAD COOKIES
The men in my life all love peanut butter cookies. I usually make 3-INGREDIENT NUTTER BUTTER COOKIES but wanted to try something a bit different. I decided on "Monkey and Me Kitchen Adventures" shortbread version with chocolate peanut butter icing. They were enjoyed by all!

What I did for the shortbread cookies:
-Reduced the cornstarch to 1 TBSP since I wanted the cookies a bit chewy
-The dough was thick so after initial stirring I mixed it using my hand
-Used the palm of my hand to flatten the cookie dough balls and then my fingers to repair the edges where there were small cracks
-Each cookie weighed 25 grams before baking and I made 16 cookies.
-Used 2 separate cookie sheets. The cookies did not spread much.
-Made 1/2 batch of the icing
